Cranberry Walnut Chocolate Bark

My friend Elizabeth (aka Girl Gone Raw) showed me a super-simple raw chocolate bar recipe last Summer during my 6 week introduction to Raw Foods.  It’s hard to believe that making chocolate could be so quick, easy, and…oh…good for you!  Since then, I’ve used her recipe as a base for so many yummy creations, like almond butter cups, chocolate dipped frozen banana bites, chocolate covered berries, and more.

This week, I was inspired by a gorgeous pinterest pin that I stumbled on, which led me to a recipe from Lisa Thiele on her wonderful With Style and Grace gluten-free lifestyle website for Dark Chocolate with Pistachios and Sea Salt.  The recipe quickly got me to thinking about the many variations that could be created using the Girl Gone Raw basic chocolate bar recipe topped with various nuts & dried fruit.

This version happens to use Walnuts & Cranberries, but as you can imagine, could be any combination of nuts & dried fruit.  Because of the more liquid nature of the raw chocolate recipe, the nuts & berries won’t quite sit on top as nicely as they do in Lisa’s recipe, but the treat is still absolutely delicious!

Cranberry Walnut Chocolate Bark

Prep Time: 20 minutes

Un-Cooking Time: 20 minutes

Total Time: 40 minutes

Cranberry Walnut Chocolate Bark

Ingredients

    Girl Gone Raw Basic Chocolate Bar Recipe (this is a "double batch" to make a pan full of chocolate bark)
  • 1/2 Cup Raw Coconut Oil, "melted"
  • 5 Tbsp agave, honey, or maple syrup (maple syrup is my fave when combining w/cacao!)
  • 5 Tbsp raw cacao powder
  • 1/4 Tsp Sea Salt
  • Toppings
  • 1/4 Cup Crushed Raw Walnuts
  • 1/4 Cup Dried Cranberries

Instructions

  1. If it's in a white/solid form, "melt" your coconut oil by placing the jar in a warm bowl of water, setting it in the sun, or placing it in the dehydrator at a low temp.
  2. Once coconut oil is melted, mix in maple syrup (or your sweetener of preference), cacao powder, and sea salt.
  3. Line a small cookie sheet or tray with parchment paper & twist corners to create outer barriers
  4. Sprinkle Walnuts & Cranberries over the top
  5. Place in freezer until completely solid (approx 15-20 min)
  6. Remove from freezer & break into several small pieces
  7. Eat & Enjoy!
  8. NOTE: You'll want to keep your chocolate bark in a cool environment. Due to the nature of coconut oil, it will get soft again at about 70 degrees, & will melt at 76.
