GOT TOMATOES?


Tomatoes are everywhere!!!!!!!!  I couldn’t resist a special deal on organic tomatoes from our local food co-op & I can home with 20 pounds of gorgeous, red, ripe yumminess. What’s a girl to do with 20 pounds of ripe tomatoes you ask … well, dehydrate them, of course!

I cut the tomatoes into quarters & put them into the dehydrator (no seasoning necessary) … for 48 plus hours.  Now that’s a long time & it’s worth every bit of the wait.  Nothing tastes as good as a homemade sundried tomato. They are sweet & chewy & downright delicious.

The idea behind dehydrating fruits and veggies is that you can preserve them and carry a little piece of Summer forward with you into Autumn & Winter. That’s a lovely idea, but in our house, these sundried tomatoes will be lucky to last a week.
